Valerian is a great teacher. He is very patient and down to earth; very easy to relate to. He really simplified the roasting process to some of its simplest components, which helped me break through a number of my misconceptions. I came away with more confidence in my roasting abilities. Doing a group class had many benefits. Hanging out with Valerian and my classmates while doing some informal samplings of coffee in the morning, besides just being fun, really helped me get better at describing what I was tasting. We could reflect on each others descriptions and many times I would say, "Yes you've described exactly what I was tasting but didn't have a word for!" The business part was very informative and consisted of practical matters from branding to bags, websites composition and marketing, but more importantly asking you to think about to how interface your future (or current) business with the world beyond your own happy little home in front of the roasting machine.
