My wife and I run a taco stand in Hilo Hawaii. We also do private event catering. The taco business gets pepper in gallon plastic bins. But for important events, we like to get quality ingredients. We have a variety of finishing salts, so it seemed prudent to use some premium pepper as well. I came across yupanqui a while back. After trying others, I finally gave yupanqui a shot. I got the green pepper in the grinder from Walmart online. I am so happy I got these. I thought I would keep them for specific use, but increasingly I find myself reaching for the green pepper whenever I’m making meals for our family and friends. They offer a very bright punch of flavor, but with a softer bite than black pepper. There is a woodsy, deeply herbaceous scent that leaves me wanting more every time. I will absolutely order more of this kind, and I will eventually work my way through the yupanqui product line. If the others are anywhere close to as good as the green have been, I see myself remaking a lot of recipes and seeing how much they improve. An absolute MUST for any discerning home cook…and any chef will love the quality and extra edge this product gives. My only regret is not buying more!
