Ordered the wagyu roasting joint for Mother’s Day and was the worst chewiest beef I’ve ever had. I slow roasted at 90°c for 3.5 hours until a core temperature of 53°c, rested for an hour and reverse seared for 10 mins at high. I get amazing results from this method from even high street supermarket beef.We were all looking forward to this as it was sold as Wagyu but the whole family said it was too chewy. What a let down. I feel robbed.I emailed to complain and was told that I had to cut across the grain (like it’s my fault and don’t know how to carve a joint) and…..“Thanks for my feedback”Very disappointed with the beef and the customer service.This was my first experience ordering with Tom Hixson and will not be ordering again.
