First time customer, and ordered a wagyu sirloin tip roast. Slow cooked to 130 degrees internal, let it rest, and sliced it. This roast was inedible due to toughness so I decided to cook it to 140 and thin slice it for BBQ sandwiches. Still no luck. The meat had a decidedly odd flavor and a texture that resembled something that would come out of a Bill Gates lab. I have been cooking my entire life, and we are long time customers of Snake River Farms, never disappointed, yet I have never seen a piece of meat like this. My wife wouldn't touch it, and I ended up feeding it to the buzzards. As an aside, I also ordered a tri-tip which we have not tried as of yet.
